It’s smooth, filling, and works as a:

And if you like a bolder finish, you can add a tiny amount of bitter kola (optional) to deepen the flavour.
What you’ll need (simple ingredients)
Base ingredients
- 1 cup tigernuts (dry)
- 4–5 cups water (for blending + adjusting thickness)
- 4–6 soft dates (pitted)
- Pinch of salt (makes the flavour pop)
Optional flavour boosters
- ½ tsp cinnamon or ginger (great combo)
- ½ tsp vanilla
- Optional bitter kola: start very small (a pinch of powder or a tiny piece if blending raw)

Step 1: Soak the tigernuts (for the best creamy texture)
- Rinse tigernuts thoroughly.
- Soak in clean water for 12–24 hours.
- Drain and rinse again.

Step 2: Blend everything
Add to a blender:
- soaked tigernuts
- dates
- 3–4 cups fresh water
- pinch of salt
Blend for 1–2 minutes until very smooth.
Texture tip:
Lighter milk: add more water
Thicker milk: use less water
Step 3: Strain (optional but recommended)
Pour through a nut-milk bag, clean cloth, or fine sieve.
- Squeeze slowly to extract the milk
- The leftover pulp can be reused (see ideas below)
If you don’t mind texture: you can skip straining and enjoy it as-is.
Step 4: Taste and adjust
Taste it, then adjust:
- More sweetness: add 1–2 more dates
- More spice: cinnamon/ginger
- Thinner: add water
- Creamier: blend a little longer

Bitter kola can be strong, so the key is small amounts.
How to add it:
- If using powder: add a pinch and blend again
- If using raw bitter kola: add a tiny piece and blend (taste first)
